Fruit from the 2005 vintage Hahn's Haus Cabernet Sauvignon was sourced from a premium vineyard in the Dixons Creek region of the cool climate Yarra Valley. Three tonnes of hand-picked fruit were fermented in an open pot and once pressed, produced seven barrels. The maturation process involved 24 months of barrel ageing in French oak barriques, followed by a further nine months of bottle ageing, prior to release. No fining agents are used during production. If necessary, natural grape acid is added and minimal sulfur dioxide is used as a perservative. No additional chemicals are added which results in a grounded and somewhat earthy wine in style which has strong varietal fruit expression. Hahn's Haus is 100% Cabernet Sauvignon. Total production of this vintage was 2000 bottles. |
